Our story

Beer should tell a story.

India has been fermenting for thousands of years. The Rigveda sings of soma, and forest communities still brew the way their grandparents did. Most of that never made it into a pint glass. We went looking for it.

ICB started with deep research into the Indus Valley and India's forgotten brewing traditions. The beers that came out of it are brewed here with Indian ingredients, from wild forest honey to native fruit, and refined with master brewer Antonio Rodriguez-Giralt at our research centre in Belgium. Then we built a place worth drinking them in: two acres of water, palms, brick and steel, where the city slows down.

“We don't just sell beer. We sell experiences.”
Gopichand Cherukuri, Founder

Indian

Youthful and rooted, ancient and futuristic. Our names, symbols and flavours come from here.

Craft

Artisanal and creative. Small batches, made by people who care how they turn out.

Brewery

Brewed naturally from water, malt, hops and yeast, with no preservatives.

We are the revisitors of a great culture.

Norse, Greek, Balinese. We have wandered through all of it, and now we are coming home. Young and rooted, ancient and futuristic, respectful and innovative, and just a little bit crazy about doing it properly.

The tap wall

Nine taps.
Take your time.

Pick one and watch the glass fill. Six have earned a permanent handle. The other three change with the season and with whatever Antonio is in the mood for.

Everything on the wall is brewed on site by master brewer Antonio Rodriguez-Giralt and the brewhouse team, with recipes developed at our research centre in Belgium. Natural ingredients, and no preservatives. Nothing goes to waste either: our spent grain goes to Elizabeth Yorke and the team at Saving Grains, who turn it into granola and crackers.

Seven zones, each with its own mood, built around one idea we call COAST. Most people drift through three or four before the night is out.

    The place

    Two acres change
    a lot after dark.

Water channels and palms, brick vaults and steel, a staircase that glows, and a replica of the Indus Valley's Dancing Girl keeping watch over the main hall.

    Eat

    Forgotten tastes,
    new avatars.

We went hunting through India's kitchens to bring back flavours people had stopped cooking. Led by Executive Chef Kumaran Jayapal, the menu leans into the coast and the Deccan rather than the usual bar list.

    Coorg

    Pandi Curry

Kodava pork, slow-cooked with kachampuli, the dark vinegar Coorg families make from Malabar tamarind, and plenty of pepper. Order it with Nandi Nectar.

    Mangaluru

Neer Dosa with Chicken Ghee Roast

Lace-thin rice crêpes with a ghee-rich roast that does not hold back. If you order one thing, make it this.

    Bar

    Peanut and Cashew Roast Masala

Lime, raw onion and green chilli, roasted to order rather than sitting in a jar. It never quite makes it off the table.

    Grill

    Chilli Pork

Crisp at the edges, dark and sticky in the middle. Goes well with El Chamraj and a second round.

    Tumba tasty. Full memories.

    The logo story

    Meet Vari,
    the thirst quencher.

Vari carries barrels on both shoulders and wears ceremonial headgear that doubles as a water jug, a reminder that none of this works without water. Look up and you will find Vari in corten steel on the glasshouse wall.

We are your Varis, the thirst quenchers. May your mug never be empty, and your heart be full of joy.

The ICB wordmark is built like an ancient seal. Seals were how people once kept accounts of their wealth, so we made one for a clan whose wealth happens to be happiness.

    The symbol language

    Stories in pictures,
    before words.

A set of symbols drawn from old Indic pictograms, then carved into a system of our own: pictorial, minimal, primal, crafted. Once you spot the first one, you will find them everywhere, on the menus, the coasters, the doors and the walls.

    The people
    behind the pour.
